Fresh Microgreens & Herbs
At Blas, every ingredient has a purpose, from the main elements of a dish to the smallest finishing touches. Through our Welsh Sourcing journey, we celebrate the local producers who help bring our menus to life. Green Up Farm, based in Pembrokeshire, provides us with vibrant microgreens and herbs that add freshness, flavour and a final flourish to our dishes, showcasing how even the smallest ingredients can make a meaningful impact.
Growing with Innovation
Based in the heart of Pembrokeshire, Green Up Farm is an innovative local producer specialising in premium microgreens, micro herbs and speciality crops. Founded by Toni and Alex, the farm combines a passion for exceptional produce with a commitment to sustainability, using indoor hydroponic vertical farming to grow fresh, pesticide-free crops all year round. Their modern growing methods allow them to produce consistently high-quality ingredients while using significantly less land and water than traditional farming.
Fresh Microgreens and Living Herbs
Green Up Farm grows an extensive range of living microgreens and herbs, each selected for its unique flavour, texture and vibrant colour. Their crops are delivered while still growing, ensuring maximum freshness, longer shelf life and exceptional quality. From peppery mustard shoots to delicate herb varieties, every crop is cultivated in a carefully controlled environment, allowing them to provide chefs with reliable, flavour-packed ingredients throughout the seasons.
Finishing Touches in the Kitchen
At Blas Restaurant, Green Up Farm’s microgreens and herbs provide the finishing touch to many of our dishes. More than simply a garnish, each variety is carefully chosen to complement the flavours on the plate, adding freshness, aroma, texture and visual appeal. These final details reflect our belief that every ingredient should have a purpose, celebrating the quality of local Welsh produce from the first bite to the last.
