Blas Restaurant is delighted to bring the flavours of St Davids to The Sorting Room for an exclusive three-day pop-up experience.
This special collaboration brings together two like-minded destinations with a shared passion for Welsh hospitality, craftsmanship and storytelling through food. Set within the elegant surroundings of The Sorting Room at the Parkgate Hotel, Cardiff, the pop-up offers a unique opportunity to experience Blas in a new setting, while staying true to the spirit of Pembrokeshire.
At the heart of the event is Blas’ talented kitchen team, led by head chefs Dan Slipakiv and Gareth Evans, alongside Justin Llewellyn from The Parkgate Hotel. Together, they have created a menu inspired by land and sea, celebrating the finest local produce Pembrokeshire has to offer. Each dish reflects a deep respect for provenance, seasonality and the natural landscape that defines our region.
Guests can expect the flavours, creativity and attention to detail that have made Blas a destination for food lovers across Wales – thoughtfully presented, carefully paired and rooted in a strong sense of place. This is more than a dining experience; it is a celebration of Welsh heritage, brought to life in a beautifully refined setting.
