Our spring menu celebrates the season in its purest form, fresh, vibrant, and rooted in the landscapes that surround us here in St Davids. Every dish has been thoughtfully created to showcase the very best of local flavours, with ingredients sourced from trusted producers just moments from our doorstep.
One of the standout ingredients this season is the beautiful Solva crab, landed nearby and celebrated for its delicate flavour. It features across our menu in refined, seasonal dishes that let its natural freshness shine.
From the hedgerows and wild corners of Pembrokeshire, we’ve embraced the arrival of wild garlic, bringing a gentle aromatic depth to our spring plates. It’s a fleeting ingredient that captures the essence of the season, bold, fresh, and unmistakably local.
On the coast, John Dory takes centre stage, a fish prized for its fine texture and subtle taste. Prepared simply to let its quality speak for itself, it reflects our approach to cooking: ingredient-led, elegant, and unfussy.
